Ingredients

1 (13" x 9") store-bought focaccia

4 Tbsp. extra-virgin olive oil, divided

2 medium red onions, thinly sliced

1 tsp. kosher salt, divided

1 Tbsp. granulated sugar

2 tsp. red wine vinegar

1/4 cup crumbled goat cheese

1/2 tsp. smoked paprika

5 medium avocados

1/2 tsp. freshly ground black pepper

Flaky sea salt, for garnish

Instructions

Preheat Oven:

Arrange a rack in the top third of the oven and preheat to 450°F (232°C).

Prepare Focaccia:

Place focaccia in a parchment-lined 13" x 9" baking dish.

Brush the top with 2 Tbsp. olive oil.

Toast until lightly browned and crusty, about 10 minutes.

Let cool slightly.

In a large skillet over medium heat, heat remaining 2 Tbsp. olive oil.

Add sliced onions and cook, stirring occasionally, until deeply golden, 15–20 minutes.

Season with 1/2 tsp. kosher salt.

Sprinkle sugar over onions and stir until dissolved, about 1 minute.

Slowly pour in vinegar and cook, stirring, until reduced and onions are glossy, 1–2 minutes more.

Prepare Toppings:

In a small bowl, combine goat cheese and smoked paprika.

In a medium bowl, mash avocados until small chunks remain; season with pepper and remaining 1/2 tsp. kosher salt.

Assemble:

Spread mashed avocado over toasted focaccia.

Top with caramelized onions.

Sprinkle with goat cheese mixture.

Finish with a sprinkle of flaky sea salt.
