Ingredients
  

Muffin Batter

1/3 cup unsalted butter (softened to room temperature)

1/2 cup granulated sugar

1 large egg (room temperature)

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 1/2 tsp baking powder

1/2 tsp ground cinnamon

1/2 tsp salt

1/2 cup milk (any kind, dairy or non-dairy)

Coating

  • 3 tbsp unsalted butter melted
  • 1 cup powdered sugar

Instructions
 

Preheat oven to 350°F (177°C) and grease a mini muffin pan.

    In a mixing bowl, cream butter and sugar until smooth. Add the egg and vanilla, and beat until well combined.

      Add flour, baking powder, cinnamon, and salt. Slowly pour in milk and mix until a thick batter forms.

        Spoon the batter into muffin wells, filling each about 2/3 full.

          Bake for 12–14 minutes, or until a toothpick inserted comes out clean. Let cool in the pan for 5 minutes.

            While muffins are still warm, dip in melted butter, then roll in powdered sugar. Set on a rack and serve warm.

              Notes

              These muffins taste best fresh. For storage, keep at room temperature for 1 day or refrigerate for up to 1 week. You can freeze the uncoated muffins for up to 3 months and coat them after thawing.
